I’ve never been so happy to fold laundry, steam broccoli, wash dishes, and pass out in my own bed after catching up on all the Scandal episodes I missed while I’ve been away these past three weekends.
Weekend 1: I floated the river in Austin with the Aussie and friends where I drank only one sip of a Mike’s Hard because I was really content just lounging in a large intertube in the sun. Then witnessed two people projectile vomit by the end of the trip.
Weekend 2: Tiki lounges in SF are amazing! For my childhood friend’s bachelorette, we cruised around the Bay on a boat, then went on a tiki. Our itinerary included: The Tiki Room, Lipo Lounge, Pagan Idol, Smuggler’s Cove and Trad’r Sam).
Weekend 3: NYC with troll friends! We watched Aisha Tyler, Jessica Walters and more ad lib voices to various TV show scenes at the Vulture festival (and got free manicures in the lounge afterwards) and then split a quarter pound of pistachio, matcha and coffee halva at Chelsea market. We walked across the Brooklyn Bridge and took a rest break in the giant West Elm, ate Baked treats and generally hung out and had a v fun time.
Oh and before that, I hosted a breakfast taco bracket taste-off as an assignment for my freelance post at Houston Press. In short, the idea was to have 8 teams visit 16 breakfast taco spots around Houston. Each team would try tacos at two places; the winning place would proceed to the next round of tasting and so on until we had an overall winner (you can read about the results here). It was such perfect timing to hang my new Houston map print up because now I can mentally star all the taco places we visited on my lovely wall art! One of the tacos that made it to the second or third round was a potato and egg taco–which was pretty impressive considering it was competing against other tacos with chorizo, bacon, etc. Some tasters actually hated it because the potatoes “tasted like day old fries” but I actually loved them because: day old FRIES. What is to hate about fries in a breakfast taco?
So when I made Deb’s oven fries when I got back with some lonely potatoes that had begun to sprout in the depths of my fridge, I saved some and folded them into some eggs the next morning for breakfast tacos. Secret: these days, I don’t even scramble the eggs before adding them to the pan. I just crack them in and stir like crazy and voila: scrambled eggs with half the amount of dirty dishes!
Giving you a recipe for breakfast tacos seems kind of silly, but I added one at the bottom anyway. PS you can obviously use leftover fries from takeout or any kind of fries, but just always add them to breakfast tacos because they are the best kind of potato.
Potato and Egg Breakfast Tacos
Ingredients
- Leftover fries can be from takeout, leftover, or homemade--Smitten Kitchen's oven fries highly recommended
- Eggs about 1 to 1.5 eggs per small tortilla
- Tortillas
- Caramelized onion optional
Instructions
- Re-heat fries over medium heat in a medium frying pan until warmed through and crispy on the outside.
- Add eggs and scramble until cooked to desired texture. Salt and pepper as needed and stuff inside a tortilla, adding caramelized onion and any other topping (e.g. salsa) and EAT!
