¾cupoat flourI ground a scant cup of rolled oats in my food processor
½cuprolled oats
¼cupwhole wheat flour
½teaspoonbaking soda
½teaspoonbaking powder
½teaspoonsalt
2large bananasmashed (VERY RIPE. Freezer-black is best.)
¼cupyogurtany kind
2tablespoonspeanut butter
2tablespoonscanola or vegetable oil
¼cupof granulated sugaror 3.5 tablespoons honey or other liquid sweetener.
1egg
1teaspoonvanilla
¼cupchocolate chips
Instructions
Preheat oven to 350 and grease a loaf pan.
Combine all dry ingredients in a large bowl. In a smaller bowl or glass measuring cup, mash the bananas. Add the yogurt, peanut butter, oil, sugar, egg and vanilla; whisk to combine. Gently stir the wet ingredients into the dry until just combined, scraping the sides. Fold in the chocolate chips. Pour batter into prepared pan and bake for 40-45 minutes. Top should be browned and spring back slightly when done.
