Potato and Egg Breakfast Tacos

The best kind of potato (french fries) remixed into a breakfast taco!


  • Leftover fries can be from takeout, leftover, or homemade--Smitten Kitchen's oven fries highly recommended
  • Eggs about 1 to 1.5 eggs per small tortilla
  • Tortillas
  • Caramelized onion optional


  • Re-heat fries over medium heat in a medium frying pan until warmed through and crispy on the outside.
  • Add eggs and scramble until cooked to desired texture. Salt and pepper as needed and stuff inside a tortilla, adding caramelized onion and any other topping (e.g. salsa) and EAT!
