These whole grain waffles use whole wheat flour and aquafaba (or chickpea brine) for crisp, hearty, lightly sweet waffles!

Equipment
1.5 cups whole wheat flour
3 tbsp brown sugar
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp kosher salt
3/4 cup plant-based milk of choice, at room temperature
1/4 cup vegan butter, coconut oil, or vegetable oil
3 tbsp aquafaba
1/2 tsp vanilla
Instructions
Whisk together all dry ingredients: whole wheat flour through salt. In another bowl, combine the mashed banana, milk, vegan butter or oil, aquafaba and vanilla. Gently fold wet ingredients into dry mixture until just combined with no floury streaks.
Grease a waffle iron and cook as directed. Makes approximately 4 waffles.
Notes
To get aquafaba, I simply open a can of chickpeas and drain out the liquid to use. Reserve the chickpeas for another use!
