3/4cupwhole pistachios or pistachio pieces (I use roasted/salted)90g
9tbsppowdered sugar70g
1.5tbspwater20ml
1/2tspalmond extract*optional
Instructions
In a food processor, add 3/4 cup pistachios and 9 tbsp powdered sugar and process until uniformly crumbly.
Add 1.5 tbsp water and 1/2 tsp almond extract* (if using) and process until a smooth paste forms. Makes about 2/3 cup or around 175 grams of pistachio paste.
Notes
*If you're able to find pistachio extract, that would be great to use in this recipe. Because I usually have almond extract on hand, that's what I use. Vanilla extract can also work in a pinch, or you can omit the extract altogether for a more pure pistachio flavor!
