These mini avocado toast bites are the perfect party appetizer! With pops of fruit from the pomegranate seeds and your favorite aged cheese, these are the perfect salty sweet bite.

These tiny appetizer bites are inspired by a snack served by my friend–essentially mini avocado toasts! They couldn’t be easier to make.
Simply smash avocado on crackers (specifically Mary’s Gone Cracker’s Everything flavor for that garlic/onion/seed combination). Add a slice of cheese, then sprinkle on pomegranate arils. They look so cute and festive!

Enjoy!

Mini Avocado Toasts
Ingredients
- 1 box Mary’s Gone Crackers Everything flavor crackers or similar
- ~3 small avocados or 1 large
- salt pepper
- 2-3 oz cheese like sharp cheddar or gouda
- pomegranate seeds
Instructions
- Use a small spoon to gently scoop out tiny spoonfuls of avocado and smash them onto each cracker. I found that 1/2 a small avocado was about enough to top 12-14 crackers, so you’ll need around 3 small avocados if you’re serving a whole box.
- Top with salt, pepper and a thin slice of cheese, then garnish with pomegranate seeds. Serve immediately!

Haha I can totally imagine you making these while eating cookies! I love avocado toasts, and these would make a great little appetizer.
